Food Friday: Ten Minute Taco



Jimmy and I work full-time jobs. Naturally, there are quite a few nights where we arrive home late but need a quick and nutritious meal. This week, we made veggie and turkey tacos in ten minutes. After cooking the ground turkey, we lightly steamed asparagus and spinach. Warm a tortilla and you are done! What are your quick week night tips?

  7. I make turkey tacos a lot for quick week night meals. But I've never thought of adding steamed veggies. That's a great idea! They look delicious. I also make fish tacos, chicken or tofu stir fry, quick soups, and quinoa salads when I want a quick/healthy dinner. Or sometimes I throw in the towel and get take out. Have a great weekend, Marcie!

  8. I love tacos, so easy and delicious! I usually make a big batch of chili at the beginning of the week(sometimes I use turkey meat) and it tastes good reheated with some rice all week long!

  10. How healthy! I love to make chicken quesadillas... I used the roticerie chicken from the grocery store... with whole wheat tortillas. I add lots of grilled onion, green & red peppers. spinach , black beans and cheese. I top them with lots of salsa and sour cream.

  11. This looks so delish! Hmm I'm not much of a cook but I make "Taboulet" which is basically couscous with bits of tomatoes and cucumbers, and a little parsley. Oh and olive oil. It's SO good, you've got to try it!

  12. Great recipe. Just found your blog all the way from Spain! Here in Spain lunch is our main meal, and people seem to frown upon not sitting down to a proper 2 hour meal each day (very civilised). However, your recipe would make a great dinner/supper snack. Will definitely try it.
