Food Friday: Quick and Simple Pasta



There are so many nights when I get home late and am starving. I want something good and healthy, but that usually doesn't correspond with fast. On Wednesday, I whipped up a delicious chicken spinach pasta dish in 20 minutes. (Note: I baked the chicken the night before.) All you do is boil pasta and saute onions and spinach. Did you know that cooking olive oil eliminates its nutritional value? Instead of using a lot of olive oil to cook the spinach and onions, add it directly to the pasta as a light sauce. Mix it all together and add chicken for protein.

  1. I like to sautee spinach with a little bit of canola oil just to coat the pan and lemon juice. Retains all it's nutrients and makes "cooking for dummies" proof. I'm a spinach junkie though. I could eat it right outta the bag.

  2. i make a similar thing but with spinach, fresh tomatoes, some seasoning, garlic, onion and chicken with spaghetti...its very good!

  5. I have never heard that Extra Virgin Olive Oil decreases it's nutritional value...it's adds fat, but it's good fat...

  7. This looks super tasty! I basically eat this, actually, but deconstructed -- pasta in just a touch of butter with a chicken breast on the side and a spinach salad... So good!

  9. Yummy! I love spinach so much! I don't know about fast and healthy, but I'm about to go on Atkins, since I turned 35 I have a pesky 5 pounds that just will NOT go away, we'll see how that goes! XO!

    I like stir fries as a quick meal, put lots of veggies in too and they're almost healthy, and meat strips cook quickly so dinner ready within half hour.

  20. This looks great. And I didn't know about the olive oil either, yikes!

    For quick, healthy dinners I like to make chicken and then stir-fry a bunch of veggies and pick a flavor of sorts to jazz it up. Soy sauce, vinaigrette.

    I also love a good salad of cucumbers, tomatoes and onions! YUM!
