I am not a big breakfast eater, but I love it for dinner and these banana and blueberry pancakes hit the spot! They are very sweet and healthy, unlike other fruit pancakes that cake on whipped cream and sugary fruit (yes, I am talking to you IHOP). These pancakes are insanely easy to make and are delicious. The trick is to cook one side of the pancake, then add fruit before flipping. Try them and you will be forever hooked.
