Food Friday: Vegetable Fried Rice











With not very much time, my husband and I threw together vegetable fried rice. This was a first for us, and it turned out great. I was exhausted from a long day at work, got home late, and we still managed to eat by 7:30. We sauteed onions, spinach, and asparagus, and then steamed rice, cooked an egg and mixed it all together in a pan. We cooked everything in the pan for about 5 minutes, added pepper and soy sauce, and it was done. We will definitely be having this again.

  13. Thanks everyone for your comments. I have to say, I've been unusually tired this week, my house need a cleaning, and I just didn't want to eat out again. This was so easy to make, healthy, and tasted really good! I was pretty proud of myself for not giving in to In&Out and actually making something good, quick and green. :)

  14. ohhhk, so precious isn't the best light summer read...it's really sad. check out the trailer for the movie. that being said it's a fantastic book and opens your eyes to anothers way of living and life situation...

  24. This looks delish - usually when I make fried rice i put some soy sauce in with the water while I cook the rice. I think it gives it a little bit more flavor. I also add some sirachra (asian hot sauce) if I'm feeling like an extra kick! I've never thought to add asparagus into my fried rice, but I'll have to give it a try next time.

  26. Yum! Love making fried rice! Another great option is to use the frozen brown rice from Trader Joes. It only takes 3 minutes to make.

    It's absolutely fabulous and tells you what they do to shortcut all of those meals your grandmother used to make. I haven't had a single recipe that I haven't liked, and it was gifted to me by my in-laws... a family FULL of foodies!
