Food Friday: Vegetable Tortellini


Use any combination of fresh veggies.


Chop veggies or dice into smaller pieces.


Saute in olive oil until cooked.


Add sauce and spinach then cover and simmer (the longer you simmer
the thicker the sauce).


When finished, put cold water on pasta to prevent overcooking.


Enjoy!

I grew up on pasta. My mother's family is 100% Italian, and over the years they've developed amazing pasta sauces. The one I use is very easy because it only requires 1 can of tomato sauce (and 1/2 can of tomato paste if you want the sauce very thick). The amazing flavor comes from sauteing the onions, garlic and fresh veggies. I love this dish for dinner parties because it is easy, it is a guaranteed crowd pleaser, and it only takes 30 minutes. It is also my favorite meal to take to work for lunch the next day because the pasta is better after it sits in the sauce overnight. Jimmy and I have it once a week religiously.

  1. Um, that looks so delicious! I seriously eat the Buitoni pasta raw sometimes. Is that bad? I've always loved it. But this is a great recipe. Love all the veggies you included here too.

    My in-laws were from Italy and my MIL made amazing pasta....as does my husband. I try but I swear I can sense the disappointment in my children when they know it is me cooking the dinner and not their Daddy!! Oh well!

    This recipe looks really good though, I think I may try it....thanks!

  17. Marcie, this looks amazing! I love the way you add spinach to everything you eat! I love spinach and I'm always trying to find a way to sneak it into our dinners (Gabe's not as interested in anything green). I also love squash/zucchini, so I'm definitely going to try this. It's the perfect weeknight meal!
